I remember receiving this recipe from one of Andrew's mom's friends at a wedding shower a while back. I am ashamed to say I am just now making them for the first time. I have definitely missed out on delicious yummy-ness for the past 3 years. I wish I could remember exactly whose this is so I could properly credit them, but I can't. Anyway, I don't think you will be disappointed!
2 1/2 c flour
1 1/2 c sugar
1 c chopped pecans (opt)
1/2 c uncooked oats
1 T baking powder
1 t salt
1 t cinnamon
4 eggs
3/4 c vegetable oil
1 medium zucchini, shredded
Preheat oven to 400 degrees. Mix dry ingredients. In a separate bowl, mix wet ingredients. Add to flour mixture & stir just until moistened. Spoon into muffin tins. Bake for 20-25 minutes.
