Baked Oatmeal

Amelie and I often pass the time cooking up something in the evenings. She LOVES to cook. When I'm in the kitchen, she likes to put on her apron, pull up her chair and climb up to help. So last night we made baked oatmeal to bake for breakfast this morning. This is one of our all time favorites. It is a recipe from Camp Timberline that was made every week on the last day of camp. It was always a treat. You will love it too!

6 C quick oats oatmeal
¼ c white sugar
¼ c brown sugar
1 T baking powder
1 ½ t cinnamon
1 c melted butter
1 c milk
2 eggs, beaten

Preheat oven to 350°F.  Grease one 9x13 pan.  Mix all ingredients well and pour into pan.  Bake 20-30 minutes or until golden brown. 

*Optional- you can also line the bottom of your pan with fruit. I used 2 peeled and chopped apples for ours last night, but have also used cranberries. I'm sure blueberries and pears would work well too.
