Mediterranean Pasta Salad

This made for a great Monday lunch. It's probably even better leftover too.



Mediterranean Pasta Salad

adapted from Food Network Magazine


1 pound pasta, such as bow tie or fusilli

1/3 c diced sundried tomatoes

3 T olives, sliced

1 ½ ounces feta cheese

½ red onion, diced

8-10 basil leaves, julienned

Romano cheese, grated (opt)

¼ c balsalmic vinegar

½ c olive oil

2 t Dijon mustartd

2 t oregano

salt & pepper to taste

Cook the pasta. In the meantime, whisk together the balsamic vinegar, mustard, olive oil, salt, pepper and oregano. Add all the ingredients to the pasta and toss to combine.

    can you get sundried tomatoes here? (well, obviously yes)... do you get the dried ones??

  2. Haha! I bought them from Asda in their refrigerated section. But I have seen them at Tesco in a jar. Those are good too, but they aren't dried.
