Heather's Chicken

Last time I was in Amarillo, my sister had just had her 4th baby, Cannon. She has a great group of friends who provided meals for 2 months I think and she acquired a few great recipes. When I was there her friend Heather brought this one. It was so amazing and so easy and even looks gourmet. Unfortunately, you can't get 2 of the essential ingredients here, but I usually stock up when I'm home and bring them back.


Heather’s Chicken

6 chicken breasts

4 Roma tomatoes, quartered

8 oz fresh mushrooms, sliced

8 oz bottle Italian Dressing (I use Good Seasonings that comes in the packet)

1 pkg dry onion soup mix

½ tsp oregano

2 bay leaves

Preheat oven to 350F. Place chicken, tomatoes & mushrooms in a 9X13 baking dish. Combine dressing, soup

mix, oregano and bay leaves in bowl. Pour over chicken and veggies. Bake 1 hour.
